Don’t Skip Dessert: Quick & Healthy No-Bake Energy Balls

If you're already meal-prepping for the week, don’t forget the dessert! These no-bake energy balls are guilt-free, nutritious sweet treats you can enjoy anytime—without adding extra time or stress to your routine.
Ingredients
1 cup rolled oats
½ cup nut butter (almond or peanut)
¼ cup honey or maple syrup
1 tsp vanilla extract + pinch of salt
Optional mix-ins:
2 Tbsp ground flax or chia
¼ cup shredded coconut
⅓ cup chocolate chips
¼ cup chopped nuts or dried fruit
Step-by-Step:
Mix your base — Combine oats, nut butter, sweetener, vanilla, salt, and seeds (if using) in a bowl until thick and sticky.
Add texture & flavor — Stir in coconut, nuts, chocolate, or fruit. Customize as you like!
Chill to firm up — Pop the mixture in the fridge for 30 minutes (skip this and rolling gets messy!)
Roll into bites — Scoop tablespoon-sized portions and roll them into neat balls.
Final chill & store — Chill again to set. Store in airtight containers for up to a week—or freeze up to 3 months .
